Cecil Reaves opened this Texas-style pit on South Orange in 1992, and the counter still hand-trims every order in front of you: thick, thin, sliced or chopped is your call. Brisket runs 14 to 18 hours over hickory, and the vegetables are cooked fresh each day in home style.
